Recette de la moutarde de Bénichon

Ingrédients : - 200 g de moutarde en poudre - 5 dl de vin blanc - 3 l d'eau - 150 g de cannelle en bâton - 1/2 d'anis étoilé - 1 kg de sucre candi - 1 l de vin cuit - 250 gr de farine

Préparation :
Faire tremper la farine de moutarde une demi-journée dans le vin blanc. Cuire l'eau, l'anis étoilé, la cannelle en bâtons et le sucre candi environ 2h30. Délayer la farine dans le vin cuit. Passer le jus de cuisson des épices, ajouter la farine et le vin cuit, cuire 15 min environ. Ajouter la moutarde et le vin et cuire encore 5 min.
